Why a TINY FARM blog?
Tiny Farm to Table ( TF2T) is one woman's attempt to encourage folks to turn any available sunlight into adventures in education and nutrition. Fresh food is everywhere. If one has a pot, patch or plot,or if one recognizes rogue produce, one can harvest enough food to stay connected to the earth and its amazing bounty.
Each blog post will highlight ways to use the harvest. Sometimes the instructions will provide only a taste not a tummy full, still it is a valid earth link that will be provided. A farmer friend of mine who was also a CPA, said that we only care ABOUT that which we care FOR- kind of a debit,credit thing. If we care for the food frolic, perhaps we will care about the earth itself. Perhaps creation care really can begin with calamondin pie.
The calsmondin is a tiny very very sour orange that lots of folks grow because they are such colorful miniatures. Because the trees bear soooo much fruit, and because few folks know what to do with them, you can almost always find a citrus owner that will be glad to let you glean. Twenty calamondins make about enough juice.
Calamondin Pie
i baked pie shell
1 can sweetened condensed milk
1/2 c. calamondin juice
8oz whipped cream
Combine the calmondin juice and the condensed milk. Fold in the whipped cream. Pour into pie shell. Put in fridge. You can top with more whipped cream.
